The Journey that never ends….

Times have definitely changed a lot. At 30 years old I can be young but am old enough to really grasp how the world has changed. I remember over 20 years ago. My parents would take me to the arrowhead mall in between the Glendale and Peoria area here in Arizona. They would go to every single shoe and clothing store, picked me up some stuff, picked them up some stuff. Then after we would go see the dogs and pick out our dream household puppy we would eventually get. At the very end we will go to this very famous cookie place. I can’t say the name, but the named started with “Mrs.” These cookies were simplex, but had a very elevated taste and texture, that you could probably make at home, but with a certain skill and some difficulty. They had a bite to them on the outside but soft and chewy in the inside, buttery and sweet, it’s like there was a perfect amount of everything in these cookies. But of course, nothing ever lasts forever. Sometime around 2014-15 the cookie shop closed, and these days you can only buy them at a store which are not the same. In the fall of 2016, I had changed my major from a general business degree to a culinary degree. I attended Scottsdale community college. I know that’s not the Cordon Bleu, but at 19 and 20, I didn’t have Cordon Bleu money … But despite that I still got a wonderful education at Scottsdale. They were about three baking courses where I learned the science behind making a really great cookie. Prior to this you would think a cookie would be the easiest lesson but when it comes to baking pastries and desserts. You see making things there comes a sense of style, patience, consistency, and even an appropriate environment to make a cookie come out well, from having room temperature dairy, weighing ingredients instead of measuring, even the temperature of the room has to be right. These are the skills I have learned in my time at this Institute. I got my degree in 2020. Not the best year to have a graduation, but I am certified. I notice a lot of cookie shops today lose that touch. Making these overly sweet, trendy, million grams of sugar, tasting like chemical X… Now don’t get me wrong, a cookie is not necessarily eaten for health purposes, but that doesn’t mean we need to make them WORSE than they already are…My cookies are GOING to give you what grandma would’ve gave you growing up, but with the skills from a professional. I’ve had my taste testers, coworkers, critical family members that can hardly be impressed by anything, have my cookies and I’m confident enough to promise that you will not be disappointed. These cookies will be an experience.

The meaning

Each cookie I made have a story behind them and our name named after certain people or get their names from a specific event. For instance, like me, my grandma loved to bake, but she also Hated the name, grandma. She was a glamorous woman so instead of naming the classic chocolate chip cookie (above) With the grandma title, I Decided to name them “Glamma”. The Red Shelby is named after a friend of mine (Shelby) that loves my red velvet cookies More than anybody else, And I decided to name them after her. No matter how many people order them now all I think of is Shelby. I named My iced oatmeal cookies, crater face because they look like Planet or moon with a bunch of craters. I remember I got into a heated argument with a former boss. I cussed him out and called him crater face for doing me wrong. After that exchange, I said to myself “Why not turn a bad situation and make it positive?” So I did and gave “Crater-face” the name to one of my cookies. However unlike the person I used to work for, these cookies are actually here to serve a purpose and make you feel good about yourself when you taste them 😉
